Green Plum Jam

Green plum jam is a traditional Georgian dessert made from unripe green plums. Its sweet and sour taste and aroma will truly surprise you and remind you of summer warmth. It is ideal with tea or simply eaten by the spoonful.

    Wash the plums thoroughly and remove the stems. You can leave the pits in or remove them as desired, but traditionally it's made with pits.

    Pour water into a large pot and add sugar. Place over medium heat and stir until the sugar is completely dissolved and the syrup boils.

    Once the syrup boils, carefully add the washed plums. Reduce the heat to low and simmer for about 40-50 minutes, stirring gently occasionally to prevent the plums from sticking. Skim off any foam that forms on the surface during cooking.

    Remove the jam from the heat and let it cool completely. Then transfer it to sterile jars and store in a cool, dark place.
