Horchata
Traditional Mexican Horchata is a wonderfully creamy and refreshing drink infused with rice, aromatic cinnamon, and vanilla. It is perfect for hot summer days or as a cooling balance to spicy meals. Rinse the rice in cold water, place it in a bowl with the cinnamon stick, pour over the hot water, and let it soak covered for at least 4 to 6 hours or overnight.

Transfer the soaked rice, water, and cinnamon stick into a blender and blend on high speed for 3-4 minutes until very smooth.

Strain the mixture through a fine-mesh sieve lined with cheesecloth twice to achieve a smooth, silky liquid without rice sediment.
