Khabizgina
Khabizgina is a delicious Georgian dish made with matsoni dough and a cheese and potato filling. The dough is soft and airy, while the filling is tender and flavorful.

Ingredients

Add baking soda dissolved in vinegar to the matsoni and let it sit for 2-3 minutes.

Add flour to the dough and knead a soft dough that sticks slightly to the hands.

Then place it in a cellophane bag in the refrigerator for 2 hours.

Mash the cheese and potatoes together and divide into 6 balls.

Divide the dough into 6 balls, place the cheese and potato mixture inside, and roll out thinly.
