Kidney Bean Stew with Tomatoes
Kidney bean stew with tomatoes, also known as Kelekhis Lobio, is a delicious and simple dish. This is one variation of a traditional Georgian bean dish, often prepared in a clay pot, which gives it a unique flavor.

Wash the kidney beans thoroughly and cover with cold water. Let it soak overnight.

In the morning, drain the water, add fresh water, bay leaf, and finely chopped chili pepper. Simmer over low heat until the beans are tender (about 1-1.5 hours).

Heat the oil in a pan and sauté the finely chopped onion until golden brown, about 5-7 minutes.

Add the tomato paste to the sautéed onions and mix well. Cook for 2-3 minutes.

Add the sautéed onions and tomato paste to the cooked kidney beans. Add salt to taste. Mix well and cook for another 10-15 minutes.
