Kvarabia

Kvarabia is a delicious Georgian dish made with a nadugi filling, served with bazhe sauce and ajika oil. This signature dish by Mariam Bartia and Dimitri Rcheulishvili is a must-try.

  • Vegetable oil100 ml
  • Chili Pepper1 ცალი
  • Honey1 სუფრის-კოვზი
  • Crushed Red Pepper2 ჩაის-კოვზი

    Prepare the dough: Mix flour, salt, and egg. Knead until you get the desired consistency. Wrap and let it rest.

    Prepare Bazhe: Pour boiling water over cashews, add spices and garlic, and blend. Strain through a sieve and add salt and vinegar to taste.

    Prepare Ajika Oil: In a blender, combine oil, onion, apple, blanched herbs, and chili pepper. Blend for 4-5 minutes, then strain through cheesecloth.

    Prepare Mchadi Crisps: Mix corn flour and wheat flour, add honey, crushed red pepper flakes, and salt. Knead the dough, roll it out on parchment paper to a thickness of 1-2 mm.

    Bake the mchadi crisps in the oven at 180°C for 20 minutes.

    Prepare the filling: Mix nadugi and mint, add salt.

    Assemble Kvarabia: Roll out the dough to the desired size and cut. Place the nadugi mixture in the center and cover with another layer of dough. Drop into boiling water for 3-4 minutes and remove.

    On a plate, pour bazhe, place the kvarabi, drizzle with ajika oil, and sprinkle with hand-crumbled mchadi crisps and both types of sulguni cheese mixed together.
