Mandarin Tiramisu

Prepare the mandarins: Peel 10 mandarins. Blend 5 mandarins and strain the juice. Divide the remaining 5 mandarins into segments and remove the thin skin or chop into small pieces.

Prepare the cream: Whip cold heavy cream and powdered sugar with a mixer until stiff peaks form. Separately, lightly whip mascarpone and vanilla extract. Gently fold the whipped cream and mascarpone together.

Assembly: Dip each savoiardi biscuit briefly in mandarin juice (do not soak too much) and arrange them on the bottom of the dish. Spread half of the cream over the biscuits. Sprinkle with chopped mandarin pieces. Repeat the layers.

Refrigerate the dessert for at least 4-6 hours, or overnight. Garnish with mandarin segments or grated chocolate before serving.
