    Mix matsoni, egg, sugar, and salt together.

    Add flour and knead the dough. The dough should be soft and elastic.

    Let the dough rest for 15 minutes.

    Grate the cheese coarsely. You can use Imeruli cheese, Sulguni, or a mixture of both.

    Divide the dough into 4 equal parts.

    Roll out each part into a round shape.

    Sprinkle grated cheese on each piece of dough.

    Lift the edges of the dough and join them in the center to form the Khachapuri shape.

    Heat oil in a pan and place the Khachapuri.

    Fry on both sides until golden brown, over low heat.

    (Optional) Transfer the prepared Khachapuri to a heat-resistant dish, sprinkle with butter pieces on top, and bake at 180 degrees Celsius for 5-7 minutes.
