Mini Grape Tarts
Delicious mini tarts with a crispy crust, delicate cream, and fresh grapes. This dessert is perfect for a festive table or simply for a sweet indulgence.

Mix flour and salt together.

Whip the softened butter with a mixer, add sugar and egg. Whisk until the sugar is completely dissolved.

Finally, add the flour. You will get a firm dough.

Wrap the dough in plastic wrap and store in the refrigerator for 30 minutes.

Lightly grease the tart or tartlet mold with oil or butter.

Place the chilled dough and carefully lift the sides. Cover with plastic wrap and freeze for 15 minutes.

Prick with a fork before baking.

Preheat the oven to 180 degrees Celsius and bake until golden brown.

Boil the cream: boil milk and cream.

In a separate bowl, whisk the yolks, sugar, starch and add to the boiled milk and cream. Stir constantly.

Prepare the white chocolate ganache: Place 75g of white chocolate and 75g of 35% cream in a double boiler and stir until a homogeneous mass is obtained.
