Peach Jam

Peach jam is a traditional Georgian dessert that preserves the sweetness of summer all year round. It's excellent with tea, spread on bread, or used to decorate other desserts. It's simple to prepare and will adorn any table.

    Wash the peaches thoroughly, peel them, and cut them in half. Remove the pits and cut into desired size pieces. If the peaches are very ripe, you can leave the skin on.

    In a large pot, pour water and add sugar. Place over medium heat and stir until the sugar is completely dissolved and the syrup boils.

    Carefully place the chopped peaches into the boiling syrup. Bring to a boil, then reduce heat and simmer over low heat for approximately 60-75 minutes, until the peaches are tender and the syrup thickens. Stir occasionally and skim off any foam during cooking.

    Add lemon juice 5 minutes before the end of cooking. This will give the jam brightness and a pleasant taste, and also help preserve it.

    Pour the hot jam into sterilized jars and seal tightly with lids. Let cool to room temperature, then store in a cool, dark place.
