Pear Jam

This traditional Georgian pear jam will bring warmth and sweetness to cold winter days. Tender pear slices in a translucent syrup are a true delicacy that you can enjoy with tea or as a dessert. It's easy to make and will bring you great pleasure.

    Wash the pears thoroughly, peel them, remove the core, and cut them into medium-sized pieces. If the pears are very hard, you can blanch them in boiling water for 5-7 minutes and then rinse with cold water.

    In a large pot, pour water, add sugar, and place over medium heat. Stir until the sugar is completely dissolved and the syrup boils.

    Carefully add the chopped pears to the boiling syrup. Bring to a boil, then reduce the heat and simmer over low heat for 15-20 minutes until the pears soften and become translucent. Stir occasionally and skim off any foam.

    Remove the pot from the heat and let it rest at room temperature for 6-8 hours, or overnight, so that the pears can fully absorb the syrup.

    Then, place the pot back on medium heat and boil for 30-40 minutes until the jam reaches the desired consistency. Finally, add the lemon juice and boil for another 5 minutes.

    Pour the finished jam into sterilized jars, seal tightly with lids, and store in a cool, dark place.
