Qalia
Qalia is an ancient Georgian dish characterized by its rich and aromatic sauce. Chicken is cooked in pomegranate juice and spices, giving it a unique flavor. Traditionally served with Ghomi.
Ingredients
- Pomegranate juice250 ml
- Orange juice100 ml
- Vegetable oil50 ml

Cut the chicken into desired pieces.

In a cast iron skillet, fry the chicken pieces in oil on all sides until golden brown. Remove from the pan and set aside.

In the same pan, sauté the sliced onions in the chicken fat until golden brown and softened.

Add the crushed garlic, dried blue fenugreek, cilantro, marigold, and red pepper flakes. Mix well.

Add the pomegranate juice and pomegranate seeds. Season with salt to taste.

Bring to a boil, then reduce heat and cover. Simmer for 20 minutes.

Place the fried chicken in the sauce and drizzle with orange juice (if using).

Cover and simmer on low heat for another 15 minutes, or until the chicken is cooked through.

If making Ghomi sticks, cut the previously prepared Ghomi into desired pieces, dip in sour cream and egg yolk, and fry in a pan until golden brown.
