    Wash the quince thoroughly, peel, core, and cut into medium-sized pieces or cubes. To prevent browning, soak them in cold water with a little lemon juice.

    In a large pot, combine water and sugar. Place over medium heat, stirring until the sugar is completely dissolved and the syrup comes to a boil.

    Add the chopped quince to the boiling syrup. Bring back to a boil, then reduce heat to low and simmer for 20-30 minutes until the quince is slightly softened. Remove from heat and let it cool completely (about 4-6 hours or overnight).

    Place the cooled jam back on medium heat. After it boils, simmer for another 30-40 minutes, or until the syrup thickens and the quince turns translucent and amber-colored. Add lemon juice towards the end of cooking.

    Remove from heat and let it rest for 10-15 minutes. Then, pour into sterilized jars and seal tightly. Store in a cool, dark place.
