Saperavi Burger
Davit Tsatsanashvili's Saperavi Burger is a delicious dish that combines traditional Georgian ingredients with the modern burger concept. The use of Saperavi red wine gives the burger a special flavor, while the Ajika and potato garnish make this dish complete.

Make a well from the flour. Prepare the yeast starter: mix warm milk, yeast, sugar, and water together and place in a warm place until it rises.

Pour the melted butter, egg, and risen yeast into the flour well. Knead the dough and add the chopped dried figs. Let the dough rest until doubled in size.

Preheat the oven to 170 degrees Celsius. Punch down the dough and shape into 150 gram balls. Let rise and bake for 25-30 minutes.

Bake the burger buns for 25-30 minutes, or until golden brown.

Knead the ground beef well. Add the chopped onion, Worcestershire sauce, and soy sauce. Continue kneading the ground beef until it becomes sticky.

Fry the burger meat in a pan to the desired doneness.

Prepare the Ajika: Grind or finely chop the bell pepper, red chili pepper, walnuts, and spices. Add salt and vinegar.
