Spanish-style Roasted Piglet

    Rub the cleaned piglet with coarse salt and refrigerate overnight.

    Blend all the seasoning ingredients together and leave at room temperature overnight.

    In the morning, thoroughly rub the prepared seasoning all over the piglet, inside and out. Keep in the refrigerator for 2 days, turning periodically.

    Before roasting, remove from the refrigerator and leave at room temperature for 2 hours.

    Roast in a preheated oven at 120-140 degrees Celsius. Periodically baste with its own rendered fat. When the meat is almost ready, increase the temperature to brown the skin well.
