Tatara (Grape Must Pudding)
Tatara is a traditional Georgian dessert made from grape must and flour. It's a rich, sweet, and aromatic dish, especially popular during the grape harvest season.

Pour half of the grape must (badagi) into a large pot and place it over medium heat. Gradually mix the flour into the remaining grape must, stirring constantly to prevent lumps. You should achieve a smooth, thin batter consistency.

Once the grape must in the pot comes to a boil, slowly pour in the flour mixture in a thin stream, stirring continuously with a wooden spoon or whisk to prevent sticking to the bottom and forming lumps.

Continue cooking over low heat, stirring constantly, until the mixture thickens and reaches a porridge-like consistency. This process takes approximately 15-20 minutes. Tatara is ready when it coats the spoon well and forms bubbles.

Remove the ready tatara from the heat and spoon it into desired serving dishes. Optionally, sprinkle with chopped walnuts. Serve warm or chilled.
