Urtskha is a traditional Svanetian dessert, modernized by Paata Choniashvili. It's a delicious sweet made with nuts, dried fruits, and honey, coated in white chocolate and served with mascarpone cream.

    Finely chop the walnuts and dried plums.

    In a bowl, mix the pistachios, chopped walnuts, dried plums, and honey. Mix well to create a sticky mixture.

    Form small balls from the mixture.

    Place the balls in the freezer for 15 minutes to harden.

    Melt the white chocolate in a double boiler or in the microwave.

    Dip the frozen balls in the melted white chocolate and place them on baking paper.

    Place the chocolate-covered balls in the refrigerator to harden the chocolate.

    To prepare the cream, mix mascarpone, whipped cream, a pinch of salt, and lime juice in a bowl.
