Vegan Khinkali with Bean Filling

These are delicious and nutritious vegan khinkali, made with a bean filling. An excellent choice for vegan diets or during fasting periods.

  • Warm Water300 ml
  • Utskho Suneli (Blue Fenugreek)2 ჩაის-კოვზი
  • Savory1 ჩაის-კოვზი
  • Ground Red Pepper½ ჩაის-კოვზი

    In a bowl, mix together the corn flour, bread flour, and salt.

    Slowly add the warm water and knead into an elastic dough. The dough should be soft but not sticky.

    Wrap the dough and let it rest for 30 minutes.

    Mash or blend the cooked kidney beans. Add finely chopped onion, cilantro, blue fenugreek, savory, pepper, and salt. Mix well.

    Roll out the dough and cut out circles. Place the bean filling in the center of each circle.

    Fold into khinkali shape. Secure the edges well so that they do not open during cooking.

    In a large pot, bring salted water to a boil. Carefully drop the khinkali into the boiling water.

    Once the khinkali floats to the surface, cook for another 10-12 minutes.

    Remove the khinkali from the pot and serve hot.
