Wheat Risotto with 7 Types of Mushrooms
A delicious and nutritious dish made with Georgian wheat and seven different types of mushrooms. This risotto, following Russo Daushvili's recipe, is a true gastronomic adventure.
Ingredients

Pour boiling water over the dried mushrooms and let them soak for 30 minutes.

Finely chop the onion and celery stalk.

Melt 50g of butter in a pot, add the onion and celery, and sauté over low heat until softened.

Add the soaked wheat berries and toast for 5 minutes.

Add 100ml of white wine and stir until evaporated.

Gradually add the broth from the dried mushrooms and the soaked mushrooms. Stir frequently and add more broth as it dries out.

When the mixture thickens, season with salt, pepper, and a pinch of nutmeg.

Add the remaining 100g of butter and 100g of grated Parmesan cheese and stir well.

Heat the oil separately.

Dredge pink and blue mushrooms in cornstarch and salt, along with a little crushed red pepper.
